The precision of all three of these slicers is the same, what's different is the blade size. The blade sizes are 250mm, 300mm and 350mm. If you only plan on slicing smaller items, the smallest machine will be perfectly fine. If you plan on cutting large roasting joints, Hobart's largest model is ideal.
